The Freeze drying process is a water removal process to preserve perishable foods, works by freezing the food(s), then reducing the pressure and adding heat to allow the frozen water in the foods to change directly to a vapor (sublimate). This allows foods that are freeze dried to have a crispy, airy crunchy texture while retaining flavor and nutrients.
